The natural unsaturated fatty acids

Jan 20th 2014 at 3:47 AM

If one double bond, called monounsaturated fatty acid, and if there are two or more - polyunsaturated. It is extremely important that the natural unsaturated fatty acids are in a certain spatial configuration, - cis-form. cis form hydrogen atoms at the double bond are on the same side of the carbon skeleton, so the molecule is bent in place.

In the cis form of the fatty acid double-isomer exists - the trans form, the molecule which is characterized in that the hydrogen atoms at the double bond are located on opposite sides of the carbon skeleton. With this configuration, the fatty acid molecule is not curved and straight form. Due to improper configuration fatty acids in the trans form (trans fats) are not able to properly carry out its functions in the composition of biological structures. Chemical formula of oleic and elaidic fatty acids is the same: C18H34O2. Article Source Read More: http://www.healthreadiew.com/category/skin-care/

In molecules and one or the other has a double bond at the ninth carbon atom (counting from the end). However, their spatial structure is very different. The figure shows the molecular model, in which hydrogen atoms are shown in white, carbon - gray, oxygen - red. Oleic acid, which is part of the natural vegetable oils (olive, sunflower, corn, etc.) is a cis-isomer, and the molecule has a curved shape.
