The festive season won´t end till 2014

festive I watched it on a Moliere´s play -the whole of the family had set themselves to celebrate January 6th, sitting around a table with this big pastry in the middle of it.
It made me recall the same scene on such a day when, as a brooch to the festive season, someone would be crowned as king and the one who found a broad bean in its piece would have to pay for the pastry. I don´t know if they do it like this in France, but they certainly do in Catalunya; the person who finds a little surprise in its piece is to be crowned as king and the one to find the broad bean will have to pay for it. Should you like to do it like this at home and wherever you live, you´ll only have to get the ingredients to bake this sweet pastry.
This is what you´ll need:
350 grammes of strength wheat flour, 25 grammes of fresh leaven, 125 ml. of full fat milk, 100 grammes of sugar, 75 grammes of butter, one egg and an extra yolk (large size) Orange zest grated, a spoonful of mature red rum, small spoonful of orange-flower water (the one used for baking and food) a small spoonful of fine salt.

First of all, we´ll dissolve the leaven in lukewarm milk. Best way is to crumble it with one´s hands and we´ll leave it to rest for 15 minutes. Of the 350 grammes of flour, we´ll keep 30 for baking it. Then, we´ll pour the rest of flour (320) in a bowl, adding the orange zest grated and the sugar to let it rest for 15 minutes. After this time, we´ll add the milk with the leaven to mix it well to get a thin and creamy dough. Pour some of the remaining flour on a table to work out this dough. At first, it´ll be bit too sticky, but as one works it out, it´ll get less stickier. We´ll know this if we roll it on the table and it rolls easily. Should we need to get it less stickier, we may add some more flour of the one we have, but we´re to remember that the drier, the hader it will be.
We´ll take this ball and we´ll wrap it with cling film to place it in a room where it´s dry and warm -the warmer the room is, the quicker this ball grow. After this, it comes the most important part of it, which is taking this ball to give it a shape such as on photograph. It should be round and with a big hole in the middle. A couple of hours and it´ll have grown big enough and we´ll decorate it as we fancy, but not without having painted it with beaten egg.
You can decorate it with crystallized fruit, finely sliced almonds or just sugar.
Bring it to the oven to bake, but before painting it with egg, do not forget to put a little surprise and a broad bean inside and we´ll see who is crowned and who has to pay for the bun.
