Recipe - Chili

1 onion, chopped

1 cup celery, chopped

1 green pepper, chopped

1 red pepper, chopped

3 lbs hamburger (or diced steak)

2 cans tomato paste

2 cans tomato sauce

2 cans diced tomatoes

salt and pepper to taste

1 tbsp chili powder

1 cup rice, cooked

1 tsp crushed red peppers

1 can ro-tel diced tomatoes and mild chiles

2 tbsp garlic

1 can red kidney beans

2 tbsp brown sugar

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup sour cream

½ cup green onions, chopped

2 tbsp flour

Brown hamburger. If you used less than 97% lean, drain fat. In separate pan, sauté onions, green peppers, red peppers, celery with a little butter or oil. Add flour to hamburger, then tomato paste, sauce, diced tomatoes, ro-tel, kidney beans, stirring until blended. Add spices, brown sugar, rice and sautéed veggies. Simmer for an hour at least. Top as desired with shredded cheeses, sour cream and/or green onions. c
